PUMPKIN COOKIES WITH CREAM CHEESE GLAZE RECIPE

Pumpkin Cookie Ingredients

2 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
1 1/2 cups granulated sugar
1/2 cup butter (1 stick), softened
1 cup pumpkin puree
1 large egg
1 tsp vanilla extract

Cookie Instructions

Heat oven to 350 degrees and line baking sheet with parchment paper. In a bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg and salt.  In a separate bowl, beat together the butter and sugar and add in pumpkin, vanilla, and egg and blend until smooth. Gradually combine the dry mix to the liquid mixture. Drop by rounded tablespoon onto sheet and bake for 18 minutes.

Glaze Ingredients

1/2 cup plus 2 tbsp powdered sugar
2 tbsp cream cheese (Neufchatel cheese), softened
1 tsp lemon juice
1/4 tsp pure vanilla extract
Pinch salt

Glaze Instructions

Combine powdered sugar, cream cheese, lemon juice, vanilla extract and salt until creamy. Sip a spoon into the glaze and lightly drizzle over cooled cookies.

Easy Unique 1st Birthday Smash Cake Tutorial

I have a secret. I am not very good at baking. I can put together a mean party theme - Mickey Mouse Clubhouse toddler birthday party? I'm all over it. FIretruck party complete with Easy Fire Fighter DIY Party Game? No problem. But I tend to call in reinforcements when it comes to creating an amazing owl cake or a Nintendo question block cake (Stephanie, you rock).

When I set out to make the food for Addie's party when she turned one, I knew I wanted an owl for her main cake, but I didn't know what to do about her smash cake. I was struck with inspiration while we were working on the owl and matching cupcakes and thanks to the awesome supply stash my baking friend brought over, we had almost everything I needed to make the cutest little easy first birthday smash cake.

Multicolored Smash Cake - Supplies Needed
-6" Cake Pan
-Boxed Cake Mix of choice (yeah - I used boxed cake) and the ingredients listed on the box
-A simple frosting recipe (I used this one)
-Gel Food Coloring (I used 4 colors - you can use as many or as few as you want)
-Cake Decorating Bags
-Decorating Tips #21 (I had 4 of these) and #32 (I had 2 of these)
-A fair amount of patience

Follow the instructions on your boxed cake mix to bake the cake. Don't forget to add water. Not that I know from experience or anything, but it won't turn out very well without some sort of liquid. You'll have enough batter left over to make another small cake or some cupcakes or something, so plan for that!




Once your cake is done and has cooled, whip up your frosting and apply a thin layer to the whole cake. Then stick it in the fridge so the frosting can harden a little before you start adding color.

Next, split your frosting into bowls for each separate color and add your coloring. You can use regular food coloring if you like, but I had better success with gel colors - they offer a much easier way to get the shade you're looking for without painstaking hours of mixing colors.

Disclaimer written long after this post was originally published: in the last year, I've completely banned food coloring from my house. I have no idea what I'm going to do for the next round of birthdays, because this is SO STINKING EASY. I no longer advocate actually using food coloring, however, I do have endless good things to say about how easy it is. I'm hoping to find a more natural alternative! Tips, anyone?

Next you'll need to get your cake decorating bags all set up with the #21 icing tips (here's a good youtube video on how to do this). Then, it's time to get your wrists ready for lots of squeezing.

I started with one flower of each color and alternated after that, trying to even out the colors as much as possible. There was no real rhyme or reason to my method other than trying not to let the same color touch.

This part takes a long time, but when it looks so cute, it's worth it, right?

Once you get the top of the cake and most of the sides covered, take a break and set up another decorating bag or two with the "32" frosting tips, then go ahead and do the lower edge. I did mine in two different colors, but you could use just one or all four, depending on how many tips you have at your disposal.

Ta-da! There you have it: one perfect smash cake for a perfect party.

I put my cake back in the fridge after it was done, but here's a tip: make sure you pull it out a good hour before the baby will be smashing it. Because if you don't, there won't be a whole lot of smashing - more just pounding and picking at it. Which is still cute, but not quite the same thing.

Hamilton Beach Stand Mixer + Hand Mixer Giveaway

Back when I was planning what I wanted my first home to look like, I had one plan for my kitchen: decorate it in red! That was a clever theme and very trendy - but while I still like it, I wish I had had the forethought to ask for a few extras of some basic kitchen utensils on my wedding registry. My husband gave me a stand mixer for Christmas last year, and it is easy to say that my life has changed! I don't cook (or bake) as often as I intend, but the job is so much easier with a mixer! I think I am probably spoiled for life and will never want to mix cookies by hand again. Anyone else feel the same way?

My "One Little Word" in 2014

This is not the first time I've admitted out loud that I am not good at resolutions. I liked not having anything definitive to work toward last year, but at the same time, I missed not having a goal. Because even though I fail at resolutions, I'm good with deadlines. Go figure.

Four years ago, in 2010, I jumped on the One Little Word bandwagon. My word that year was calm. I think I was moderately successful at adopting the word that year. We had a word for our little family in 2011 - trust - and that was a great one since we had a lot of changes. In 2012, our word was connect, but since I spent most of the year pregnant (and sick), we did not dedicate a lot of our time to thinking about how that word could influence us.

If you've read my blog for any length of time, you'll also find it no secret that I get stressed out about things....a lot. I frequently (here, here, here) vent express my feelings about this in writing. Regardless of how many times I hash it out, the frustration rears its ugly head time and again. I am smart enough to realize that I'm never going to completely conquer this battle with myself, but I really want to try.

So, my word for 2014? It's accept.



Accept that I'm not going to get it all done. And that it's okay.

Accept that my kids are very young, but they're growing up fast - and I don't want to spend my time with them worried and fretful. 

Accept offers of help. It's actually not possible for me to do everything by myself. 

Accept that it's unlikely my sleep quality will ever be anything near "good" again. 

Accept that my house will never be clean. 

Accept that no one cares if I don't fix my hair or wear more than pajamas for five days in a row.

Accept that I can't control everything. If my kids don't eat organic food or have structured preschool activities every day, the only person who really and truly cares is me.

Accept the good days and the bad days and the crazy for what they are, and enjoy them. Because this is the one chance I get to be a mama to my precious babies.

I've always found it a great idea to have a visual reminder of the word of the year. The first year I came up with a theme word, I made a graphic and hung it on my bedroom wall, intending to update the frame each year. You can probably guess that I'm about to tell you I'm still reminded of calm every time I look at it. So, I think this blog post will have to be it for 2014. I'm hoping to come back and reference this post often.

Mickey Mouse Clubhouse Birthday Party Toddler-Friendly Food Ideas

My little man turned two just a couple of weeks ago.  Since he loves Mickey Mouse, it seemed only natural to choose everyone's favorite mouse as our birthday party theme.  I posted a free printable template for Mickey Mouse Clubhouse Birthday Party Invitations - and now that the party is done, I have several new, fun posts to share with you!  Today I'm talking about toddler-friendly Mickey Mouse Clubhouse party food ideas!


I had big dreams of making a cake like this one that I found on Pinterest, but finally came to the realization that it was impossible while also taking care of two kids and trying not to spend a fortune on the party. 

Instead, since I was "being sensible," I took on far more projects than I intended and stayed  up far too late multiple nights in a row (and forced my poor husband to help).  Not really a good plan - I keep hoping I'll remember how stressed out I get when it comes to last-minute party planning.  Next year, Andrew may not let me do anything more than cake!

Instead of a cake, I opted to make cupcakes because they would be much easier.  My mom actually found a Wilton Mickey Mouse Clubhouse Cupcake Set at a local thrift store for $5!  It contained a lot of items, like this cupcake stand.  I was excited about that (so was Lincoln - when he saw it all set up, he declared "howwwwwwse!" over and over until we let him touch it).

The cupcakes were inspired by Disney in the Desert and Disney Family.  I made both chocolate and vanilla cake and used Oreos to top the Mickey-theme cupcakes.  I also made some normal Wilton buttercream frosting to top the rest of the cakes - in case we had guests who preferred something other than Oreos.  The Mickey cupcake toppers were part of the Wilton Clubhouse kit.


Since I'm dairy-free right now, Oreos are one of the very, very few snack items I can consume.  I absolutely could not resist making some Oreo pops (even though I actually couldn't eat them because the candy coating contains milk).  I am so thrilled with how cute they turned out!  I combined a few different ideas, which I found at Sew Divertimento, The Idea Room, and Ms. Fox's Sweets.  If I had not been crafting these at 1am the morning of the party, I likely would have tried different designs.  Example - isn't the one Minnie Mouse cute?!





Just about anything can be turned into a Mickey-themed food if you have the right tool!  If I had been really motivated, I would have made some dairy-free Rice Krispie treats so that I could eat them as well - but these were just the normal variety.  The large Mickey Mouse cookie cutter was purchased on our trip to Disney World in 2010 but thankfully you don't have to go to Disney to get one - you can find it here. The small one I found for an absolute steal (less than $1 at the time I purchased)!  It was so fun to make Mickey-shaped food!


When we made a wedding registry back in 2008, Target was stocking a fabulous set of Mickey Mouse tableware.  We registered for some bowls and appetizer plates and received them - but have never used them until now.  I was so excited when I remembered that we had them the week before the party!


The cheese was easy to cut into a Mickey Mouse shape - but we found that we could only get a few Mickey heads from each slice, and ended up with a whole bunch of random shaped pieces.  Solution: we ended up putting cubes of cheese in the bottom of the bowls and just layering Mickey heads on top.  It worked out really well!


We received multiple compliments on the punch - it's called Luscious Slush Punch and is our go-to recipe for any birthday party, baby shower, or other punch-worthy event.   It does have to be frozen overnight - something to keep in mind if you choose to try it out.

Mouseke-Pops

Just adding "Mouseke-" to everything gives the party some Mickey flair!

The birthday boy wasn't really old enough to appreciate all of the time that was spent creating this food, but he was pretty excited to see it all.  He really doesn't have much sugar in his diet - so he was also pretty excited when we gave him his very own cupcake and Oreo pop to gnaw on.


The Oreos were the biggest success.  Why?  Because, as he calls them, they are "TIRES!!!!"

Hold the Cheese and Chocolate. For awhile.

I don't know why anyone wouldn't want to eat chocolate all the time.  I mean, it's pretty much the most delicious thing on this earth.  And then there's cheese.  The second most delicious thing on this earth. What do these things have in common, you ask?  They both almost absolutely always contain dairy.  And when Adelaide was born just over two months ago, I never dreamed that I might have to give them up for her.

Fast forward to the beginning of January.  One night for dinner, I thought I would be really productive and actually baked one of the freezer meals that I had prepared in the weeks before Addie's arrival.  It's called Double Macaroni and Cheese.  It pretty much consists of cheese, cream, cottage cheese, more cream, milk, and more cheese.  It's divine.

But apparently not everyone agreed.  For two or three days after we ate this meal, my perfect happy baby disappeared.  Addie was the fussiest she had ever been in her life.  I was beside myself trying to figure out why she was screaming and writhing as though her tummy hurt all the time.  After some internet research and this article on food sensitivities in babies, I had a feeling that we might be dealing with a dairy problem.  To test the theory, I stopped eating dairy for one (incredibly long) week.  Then, as a test, I ate a sandwich with cheese and a small portion of normal macaroni and cheese.  Her fussiness and gassiness came back almost immediately.  Yes, it seemed pretty certain that she indeed has a dairy sensitivity.

Once I had established that this was the problem, I was really no better off.  You see, my main food groups are literally cheese and chocolate, with ice cream thrown in for good measure.  I had a few days of denial.  Breastfed babies are supposed to be the easiest to take care of!  I'm supposed to be able to eat normally, pass on great nutrition to my child, and lose weight without a huge amount of effort!  What happened to that?!

Eventually I realized, I needed to get over myself, accept that this was a new thing for my lifestyle, and just go with it.  I have some fabulous friends (some of whom have dealt with this in the past) who provided me with a host of recipes and food substitution suggestions.  And now, almost a month later, I can honestly say that I am not craving dairy all of the time - though I would do just about anything for some pizza!

Since the issue with babies is not lactose intolerance, but rather milk protein intolerance, they mostly grow out of it by the time they are six months old.  I can handle another three and a half months if it keeps my baby girl smiling!  It's been a bit of a challenge to eat enough calories, since I am nursing two kids, though.  Overall, this change is forcing me to eat healthier!  I am actually excited about eating fruits and veggies these days.  I also feel like I am starving most of the time.

If you find yourself in this boat, here are a few things I have already learned.

Look for Vegan products.  These tend to pop up in the organic or healthy section.  They automatically won't have milk or butter, which makes things a bit easier.


Earth Balance Buttery Spread is a decent replacement for butter, when you need something on toast or a baked potato.


Coconut Oil is another substitute that seems to work pretty well in recipes.  It has also - bonus - been awesome in relieving Lincoln's eczema!  It even smells yummy.


It is possible to cook without cheese.  This is evidenced here by our recent meal of chicken, baked potatoes, carrots, and rolls.


If you are lucky enough that your baby can tolerate soy, you can still have ice cream treats!  Unfortunately, I think Addie has a soy sensitivity as well - at least when I eat it in ice cream form.  Andrew made me this delicious almond milk and soy ice cream shake a couple nights ago.  I'm living off the memory. Nom.

And ultimately, you can survive breastfeeding a dairy sensitive baby.  Because Oreos are dairy free.  We aren't going to talk about how many of those I have consumed this month.

Lincoln's 1st Birthday: Nintendo 1-Up Mushroom Party

I am a little bit in shock that my little man is turning TWO YEARS OLD next month.  I have about three and a half weeks to put together his amazing second birthday party.  Here's what I have done so far:

-make note to self to add "make invitations" to my to-do list.

Since I'm thinking about the upcoming celebration, I felt it only made sense to peek back at his first birthday party.  I can't believe it was almost a year ago.  He is growing up too fast!  I haven't shared these photos before - I'm not sure why, because they are way too fun.


Lincoln's nursery theme is Super Mario Brothers World, so when we were deciding on a theme for his first birthday, it only made sense to go this route.  Ultimately, the theme was 1-Up - appropriate since we had taken his photo with a giant plush 1-Up mushroom every month since birth, and because he was turning 1.

I spent most of the week leading up to the party crafting and baking.  I was able to borrow a friend's Cricut die cut machine to make some my Happy Birthday Lincoln banner - and it turned out so well!

Monthly Photo Banner

I had a lot of fun making this super cute monthly photo banner!  I still have it in my craft room, and can't decide exactly what to do with it. 

The CAKE!

My wonderful friend Stephanie spent an entire day helping me craft the question block cake and mushroom pops.  There was a whole lot of trial and error involved - and I had to go to the store in the middle of the process because I baked a cake without any water in it.  It should be apparent to all that baking is not my strong suit.  Stephanie, however, makes amazing cakes.  I was super grateful for her help!

The other big baking project was these Mushroom Cake Pops.  They turned out far, far better than I dreamed possible.  They were made from large marshmallows, miniature brownies (from Target), candy melts, and fondant.  I hope to share a tutorial on how to make them sometime soon!  They were incredibly time-consuming, but made the party table look fantastic.

I tried to make tiny blue mushrooms from mini marshmallows and M&Ms, but it didn't work out quite as well as I had hoped.  The mustache straws - made in the style of both Mario and Luigi - were a big hit.

Birthday Boy!

I remember last year when I took these photos - I thought he was completely grown up.  And now he looks like a tiny baby!  I can't believe how fast they grow.

Let him eat cake.

He really wasn't sure what to think about the cake.  He hadn't really had sugar before this party, so I think the taste was overwhelming.  He took a few bites, smeared it into his hair, ears, and eyes, then freaked out and had to have a bath and new clothes.  He didn't calm down enough to go back to the party until he nursed, as well.
